Gently boil lots of fresh water in a big pot. Add a pinch of salt and carefully add your pasta. Sometimes fresh pasta can stick together a bit, if this happens, don’t pull it apart – it should separate naturally while cooking.
Cook for 1 minute, no longer, then drain thoroughly.
Serve with a trickle of olive oil – or a spot of melted butter – and a scattering of freshly grated parmigiano.
