Tortellini Ricotta & Spinach WITH APPLE AND SAUSAGE
INGREDIENTS
1 pack Tortellini Ricotta & Spinach Giovanni Rana
1 clove garlic, crushed
200 g Italian sausage, chopped
1 red apple, cubed
100mldry white wine
2sprigs rosemary
extra virgin olive oil
Salt and freshly ground black pepper to taste
METHOD
In a large skillet, heat the oil with garlic on medium-high flame. After 1 minute, add sausage, rosemary, and sauté 4-6 minutes on high flame until cooked and crispy. Lower the flame, add the apple, toss for 1 minute and add wine. Cook until wine reduces by half, 4-5 minutes. Season with salt and pepper to taste.
In the meantime, cook the Tortelloni according to package instructions and drain, reserving a little of pasta cooking water. Add Tortelloni to the skillet and toss gently for 1 minute adding a few spoons of the cooking water to loosen the sauce if needed.
